The first profession is Alchemy. Any class can benefit from it. You get your pick of potions, elixirs and flasks without the cost of buying them from the AH, which can get pricey at times, especially if you are a hardcore raider and must always have a ready supply of consumables on hand when you are raiding.
Alchemy by far is a money making profession outside of being a Priest. Flasks are a big seller. As a Priest, you can have all the mana potions you can dish out, if you have the time to scour the world looking for your materials needed. You also get the Alchemist Stones. The second profession is Enchanting. Any class can also benefit from it. Enchants are much needed as you progress to endgame instances and raids. With Wrath, you need to buy them from the Enchanting supply vendor in Dalaran for the appropriate amount of Dream Shards, though now there are enchants that will randomly drop from Ulduar bosses only in Heroic Mode.
